Pinterest Crockpot Soup Recipe

Monday’s Menu ~ Pinterest Recipe for Crockpot Pasta e Fagioli Soup

One of my goals for 2014 was to learn how to make homemade soups. I chose a few I’d like to learn in an previous post. Yesterday I made a recipe (that wasn’t even on my list) that I found on Pinterest.

My husband and I enjoy going out to eat. We like simple, casual food ~ homey, comfort food, nothing too fancy or gourmet. Olive Garden is one of our favorite places to go.

I was looking for crockpot recipes on Pinterest when I found this one. I made a couple of changes, but only because I didn’t have a couple of the ingredients on hand. I used Italian Seasoning in place of the basil and thyme, and I skipped the apple juice entirely. I also chose to slice the carrots instead of shred them. Otherwise, I pretty much followed the recipe step by step. You can find the original recipe here.

We had this for dinner last night … I served it with warm from the oven pumpernickel dinner rolls. YUM !

Thanksgiving Turkey

November 28 ~ Today I am thankful for traditions. It’s Thanksgiving Day … a day set aside for expressing gratitude for your many blessings. It’s also a day full of traditions with family and friends.

Like most American families, we indulge in a huge feast of turkey “with all the fixins”. Turkey, stuffing, and casseroles, oh my … and let’s not forget pumpkin pie with whipped cream 🙂

This big meal is the backdrop for families as they gather around a heavy-laden table and share their heartfelt gratitude. It is a day filled with love for family and friends.

Many families have certain traditions that they continue from year to year … grandpa always carves the turkey, watching football, the after dinner nap, or go to see a movie. Some families exchange names for Christmas gift grab bags or scour the ad papers for Black Friday specials 🙂

There are many different traditions, but what’s important is that traditions bind families together and are passed down from generation to generation. Traditions make memories … HAPPY THANKSGIVING !!!

November 22 ~ Today I am thankful for a full pantry. I am truly blessed to have never gone hungry. While I’m no stranger to hard times, I’ve never had to miss a meal. My family has always been fed … it may not have been fancy, but our tummies were full. My heart goes out to those parents who have nothing to feed to their children. It saddens me to think about it, but it puts my troubles in perspective and makes me grateful for all I do have.

Please remember to donate to your local food pantry … they are a great help to so many families who are struggling to make ends meet in this horrible economy.
